Chef Hassan Hind carries three generations of Moroccan culinary wisdom to Kachkech, where every dish tells a story written in saffron, preserved lemons, and the warmth of clay tagines. Born into the aromatic kitchens of Marrakech's ancient medina, he learned the sacred art of couscous rolling from his grandmother's weathered hands, mastering recipes whispered through decades of family gatherings.

Chef Hassan's philosophy runs deeper than technique: respect the ingredient as your grandmother did, honor the tradition that survived centuries, and let the rooftop view—with its minaret silhouettes and evening swallows—guide your hand. DRESS FOR THE SEASON
Evenings can be cool, especially in winter. We provide blankets, but bring a light jacket. Summer nights are warm—dress comfortably and enjoy the breeze.

Our kitchen sits at the heart of a restored 18th-century riad, where morning light filters through carved cedar screens and the scent of fresh bread mingles with orange blossom. Here, Chef Hassan and his team begin each day at dawn, selecting produce from Marrakech's markets and preparing the day's tagines in traditional clay pots.

COOKING CLASS

Join Chef Hassan on our rooftop for intimate cooking classes where you'll learn the secrets of Moroccan cuisine. Start with a morning market tour through the medina's souks, selecting fresh ingredients and learning about spices. Return to Kachkech to prepare a three-course meal: traditional salads, a tagine of your choice, and Moroccan pastries.
